This is a party-sized pre-mixed that's bursting with the tastes of the Christmas time, rendering it excellent for hosting a celebration. Reserve the remaining syrup for morning drinks, puddings, or to make additional servings of bikinis.
The Bikini Cocktail
Serves 10 people
To make the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Drink (yields 850ml, serving 10)
400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Directions
To prepare the Cordial: Combine all the ingredients inside a saucepan, heat until it reaches a gentle boil, stirring until the sugar dissolves. Then, remove from the stove and let it to reach room temperature completely. Pour into an sealable bottle, cap it keeping it in the refrigerator, it will last for about one month.
For the Cocktail Base: Mix all the spirits and syrup in a big jug, allow it to infuse for an hour, then filter it best through cheesecloth, to ensure it's completely strained.
When ready to serve: Add 85ml of the cocktail base into a cocktail shaker containing ice, gently stirring carefully for one minute until cold. Pour into an chilled martini glass or equivalent, decorate with a few cranberries adding the final touch with a light spray with the mandarin essence over the drink.
